Seared Flank Steak Salad

Cook Time: 12 minutes, rest 10 minutes
Total Time: 30 minutes
INGREDIENTS
- 1 Lb. Flank Steak
- 12oz Arugula
- 1 Lemon
- 1 Large Cucumber
- 8 oz. cherry tomatoes
- 4 Green onions
- 1/2 cup crumbled goat cheese
- 6 oz. crimini mushrooms
- 4 TBSP Olive Oil
- 2 Garlic Cloves
DIRECTIONS
In a large bowl place Arugula
Dice Cucumbers and green onion including green stems
Slice tomatos in half
Slice Mushrooms finely
Add Cucumber, Onion, Tomatoes, and Mushrooms to Arugula in bowl
Rub Flank Steak with Olive oil and mince garlic , salt pepper to taste
Place on hot grill pan or actual grill 6 minutes each side
Allow the steak to rest for 10 minutes
Thinly slice steak against the grain.
Juice and Zest 1 Lemon
Add Remaining olive oil , lemon juice and zest, salt pepper to taste mix into salad
Place Steak Slice on top
Toss Crumbled Goat Cheese on top
