Fennel, Shrimp and Avocado Salad

INGREDIENTS
- 2 Fennel Blub
- 1 bunch Rainbow chard
- 1 pound deveined shrimp
- 1 Lemon
- 1 Red Onion
- 2 Avocados
- 1 Asian Pear
- 3 TBSP Fresh Mint Leaves
- Salt and Pepper to taste
- 6 TBSP Olive Oil
- 2 Garlic Cloves
- 1 Ciabatta Loaf
DIRECTIONS
Slice the fennel very thin
Slice the Rainbow chard into thin strips
Mince the Garlic Cloves
In a sauté pan add all the shrimp with in 2 TBSP of Olive Oil and minced Garlic Cloves, pinch or salt and pepper-about 3 minutes until pink
Add in chard and fennel and wilt down
Remove from heat
On a large platter place the wilted chard and fennel
Slice Red Onion, Mint Leaves and Avocado
Scatter on top of Chard and Fennel
Zest lemon over salad
Slice and Squeeze Lemon Juice over salad, then remaining Olive Oil, salt pepper to taste
Grill Ciabatta Bread in slices EAT! LOVE! BE HAPPY!
