Asparagus, Cherry Tomato and Goat Cheese Quiche
2 5x5 puff pastry squares (purchase in frozen section any grocery store)
3 Large eggs
1/4-cup self-rising flour
1/4-cup Asparagus Long Chop (4 pieces per spear)
¼ cup Cherry Tomato Halves
4 oz. goat cheese crumbles
4 oz. Half and Half
1 tsp. salt and pepper
1. Sauté the asparagus & tomatoes with salt and pepper until tender
2. Beat the eggs, flour , goat cheese and half & half
3. Take the puff pastry and place in 4” cake pan, extra large muffin tins or small cast irons and create a well
4. Place vegetables in bottom ,pour egg batter on top
5. Bake 350 for 20-25 minutes
