Blackberry Jam Cake with Caramel Sauce Icing

Decorate: 10 minutes
Total Time: 1 hour 20 minutes    

 

INGREDIENTS 

1 Cup Salted Butter

2 Cups Sugar 

2 Cups Blackberry Jam

3 Cups All Purpose flour

1-Cup Buttermilk

5 Whole Eggs

1 tsp. Baking Soda

1/2 tsp. Salt

1 tsp. Cinnamon

1 tsp. Allspice

1 tsp. Nutmeg

 

DIRECTIONS 

  • Cream Butter and Sugar on medium using paddle 
  • Beat in Eggs one at a time
  • Add Flour, Baking Soda, Cinnamon, Allspice, Nutmeg, Salt
  • Add Jam and Buttermilk beat on medium till combined
  • Bake 45 min at 350 in two 9” round pans
  • Let Cool 
  • Add caramel sauce between the layers and pour over top layer
  • Top with a few fresh blackberries
